Description
Star anise is the fruit of an evergreen tree that can produce pods for over a century. The pods are picked while still green and unripe, then sun-dried until they turn a deep rusty-brown and develop their characteristic woody texture. It is important to distinguish this culinary spice from its cousin, Japanese Star Anise, which is highly toxic and used only for incense. The edible variety is a concentrated source of anethole, the essential oil responsible for its intense fragrance and many of its health benefits, including its ability to act as a mild sedative to improve sleep quality.
