Description
The preparation of Chilli Mixture is a multi-stage process that involves frying each component separately to ensure they reach their individual optimal texture. The base is usually a dough made of gram flour and rice flour, which is pressed through different perforated molds directly into hot oil to create various shapes like Sev and Gathiya. In the “Chilli” version of this mixture, a generous amount of high-quality red chili powder is tossed with the ingredients while they are still warm from the fryer, allowing the spice to coat every crevice.
