Description
Avalosunda is an iconic traditional snack from Kerala, deeply rooted in the region’s culinary heritage. The preparation begins with Avalose Podi, a coarse mixture made by blending soaked and ground rice with plenty of grated coconut. This mixture is meticulously roasted in a large heavy-bottomed pan (uruli) until it turns a light golden brown and achieves a distinct, nutty aroma. The addition of cumin seeds and dried ginger powder provides a warm, digestive quality that balances the richness of the coconut.
