Description
Fenugreek is an annual plant belonging to the soy family (Fabaceae), native to the Mediterranean region and Western Asia, with India currently serving as the world’s largest producer. The seeds are harvested once the plant’s pods have dried and turned yellow. While the raw seeds can be intensely bitter, this bitterness is significantly mellowed through dry-roasting or by soaking them overnight in water. Interestingly, fenugreek extract is a common ingredient in imitation maple syrups and flavorings because of its concentrated aromatic profile.
