Tapioca Round Chips are a staple in the snack shops of Kerala and Tamil Nadu. The quality of the chips depends heavily on the freshness of the cassava tuber; once harvested, the tubers must be processed quickly to prevent the starch from discoloring. The preparation involves removing the thick, woody outer skin and the inner pinkish layer to reveal the starchy white core. This core is then sliced into uniform rounds, which are sometimes soaked in water with a pinch of salt and turmeric before being dried and fried.
